Only one litre of Soul is obtained from every 33 litres of fermented sugarcane that is processed. An un-aged non-charcoal-filtered cachaca that is stored in stainless steel vats. Pure and crystal clean, its a high grade cachaca with a distinctive bouquet.

Over a century ago, Germana distillery produced its first form of cachaça: Cachaça da Palha. This expression started it all for the Caetano family, and a tradition of excellence has followed. Each bottle is hand wrapped in Da Palha, meaning a dried banana leaf. Da Palha spends its first year after distillation in French Oak barrels. French oak softens the spirits and gives the distillate a silkier mouthfeel; a feeling of elegance. After the first year, the slightly aged, now golden spirit, spends its last year in Brazilian Balsamo. Balsamo graces the young cachaça with a peppery, herbaceous aroma along with a slight bitterness to add more depth in flavor. Remarkable balance is struck by the variance of wood in its aging.

Brazil’s national drink, and by far their most popular spirit with well over a thousand domestic producers, Cachaca is just now making its debut in the U.S. In many ways it is similar to Rum. But while most modern Rums are made from molasses or other sugar by-products, only fresh sugar cane juice can be used to make Cachaca. This yields a more floral and herbaceous flavor profile compared to Rum. Both unaged (prata, “silver”) and barrel-aged (ouro, “gold”) expressions are available and used as a base for tropical drinks, like the traditional, Caipirinha.
